One of the coolest events we’ve been to so far was Trench Tech’s Rites of Passage MMA event last night. Pugilism at it’s finest. It was really exciting to watch fighters of various ages duke it out. I was impressed with the amount of camaraderie and sportsmanship on display, despite the blood and hard knocks. Also, Saipan has the most well behaved fight crowd I have ever seen.

The Thursday night street market is awesome!! There is A LOT of food for really cheap. Most spots are “5 items 5 dollars”. Everyone goes, tourists and locals alike. It’s a really easy way to have a night out on the town without spending a ton of money. And you can get some fresh veggies to carry you through the rest of the week!

Chamorro folks call it arroz caldo. We call it juk. Many cultures, especially Asians, have some form of it. We all use different toppings, but basically it is all the same, rice porridge. This is our soul food.

A few weeks ago, we went to Tinian for the Hot Pepper Festival. The water was crystal, the people were super nice, and the peppers were hotter than anything I have ever eaten! They had a lot of games for kids, most involved chasing down a farm animal. Aside from the Hot Pepper eating contest, one of the day’s biggest highlights was when the boys got to chase the greased pig. The winner went home with the pig and some cash!
